After years of anticipation, Hearthstone Kitchen & Cellar will officially reopen at Red Rock Casino Resort & Spa on Friday, January 30. The beloved neighborhood restaurant, once dubbed “the hearth and soul of Summerlin,” closed its doors nearly a decade ago, leaving a hole in the local dining scene that residents have been talking about ever since.
Clique Hospitality announced the return with reservations now available through HearthstoneLV.com. The restaurant reclaims its original 6,500-square-foot space with a completely reimagined interior that promises to feel both familiar and fresh. The new design features an expanded bar with classic bar games and inviting lounge areas – perfect for everything from casual weeknight dinners to celebrating life's big moments.

Chef Jason Janson Takes the Helm
Executive Chef Jason Janson brings impressive credentials to the revived Hearthstone, having worked at Colorado's renowned Broadmoor Hotel and most recently serving as executive chef at Vetri Cucina Las Vegas under acclaimed chef Marc Vetri. His menu focuses on approachable, ingredient-driven cuisine with subtle Italian influences.
The offerings span from handmade pastas and fresh seafood to wood-fired pizzas. Standout dishes include rotisserie prime rib served with au jus, pan-seared halibut with gremolata and couscous, and the playfully named “Abe Froman” pizza topped with garlic sausage and chili flakes. The signature bucket of fried chicken comes with buttermilk biscuits and house-made sauces, while $1 Oyster Wednesdays will showcase the raw bar.
Weekend Brunch and Craft Cocktails
Weekend brunch runs Saturday and Sunday from 10 a.m. to 3 p.m., featuring indulgent options like almond brioche French toast and a shareable bagels-and-lox tower, complemented by $25 bottomless mimosas and bloody marys. The drink program extends beyond brunch with craft cocktails made from fresh ingredients, including both classic martinis and signature creations like the spiced pear mule and fireside smash.
The restaurant operates Sunday through Thursday from 4 to 10 p.m. and Friday and Saturday from 4 to 11 p.m. For locals who‘ve been waiting years for this comeback, the return of Hearthstone represents more than just another restaurant opening – it’s the homecoming of a true neighborhood gathering place that understood what Summerlin residents were looking for long before the area became the dining destination it is today.
