The Las Vegas dining scene is about to get a serious upgrade. Cantina Contramar opens March 28 at Fontainebleau Las Vegas, and this isn't your typical tourist-trap Mexican restaurant. Chef Gabriela Cámara has built a 27-year legacy in Mexico City with restaurants like Contramar and Caracol de Mar, and she's bringing that same uncompromising approach to ingredient-driven cooking to Vegas.
What sets Cámara apart is her respect for authentic Mexican flavors without the gimmicks. Her menu showcases what Mexican cuisine actually is – sophisticated, ingredient-focused, and deeply rooted in tradition. “Mexican hospitality is rooted in generosity and in coming together around a delicious meal,” Cámara explained, and that philosophy translates directly to her approach in the kitchen.

The Menu Shows Real Depth
This isn‘t another Vegas restaurant slinging generic tacos and calling it authentic. Cámara’s menu reads like a love letter to Mexican coastal cuisine, with bright ceviches and aguachiles that let the seafood shine. The Pescado a la Talla Contramar-style – her signature grilled fish preparation – has earned legendary status in Mexico City for good reason.
The Wagyu carne asada shows she's not afraid to elevate traditional preparations with premium ingredients, while everything comes with handmade tortillas made in-house. That attention to detail matters. Too many places cut corners on the basics, but proper tortillas are the foundation of any serious Mexican kitchen. Beverage Program Goes Beyond Margaritas
The drink menu shows the same thoughtful approach. Tequila Casa Dragones co-founder Bertha González Nieves collaborated on a flight program featuring the brand's premium expressions alongside an extensive agave collection – approximately 50 tequilas and 15 mezcals. This isn't bottom-shelf stuff mixed with sweet-and-sour.
The tableside cocktail service with Carajillos and Margaritas prepared on rolling carts adds theater without sacrificing quality. House-made Clamatos and proper Palomas round out the offerings, paired with a wine list that actually complements the seafood-heavy menu rather than just checking boxes.
A Welcome Addition to Vegas Dining
Located on Level 2 next to Fontainebleau's retail area, Cantina Contramar will be open nightly from 5:30 p.m. to 10:30 p.m. The timing feels right – Vegas has been craving more authentic ethnic cuisine that doesn‘t pander to tourist expectations. Cámara’s track record suggests she won‘t compromise her standards just because she’s on the Strip.
