Las Vegas Mixtape v47: Diana’s Love Hangover, Boisterous Beer Hall, and Fuzztone Hoedown

Track #4 (of 5): Pearls Oyster & Crudo Bar @The Resort At Summerlin

A dish to seriously covet. (Image: Vegas 411)

What does the world need now? Peace, love, and more pasta, please—particularly the shrimp scampi dish with linguini at the relatively new Pearls Oyster & Crudo Bar. It’s located at The Neighborhood Food Hall inside The Resort at Summerlin (formerly the JW Marriott and Rampart Casino, in case you didn’t get the memo).

The fresh, succulent shrimp here are served over a luxurious bed of linguine, white wine, and garlic butter sauce, along with cherry tomatoes, basil, and (seriously kicking the taste up a notch) Calabrian chili peppers.  I happily soaked up the sauce with the two dinner rolls in the complimentary breadbasket (don’t skip the creamy butter). The price tag for this multi-flavored offering is only $22.

It’s easy to start a love affair with Pearls, located right next to Chef Fabio Viviani’s two other places at the resort: the buzzy ai Pazzi restaurant and his Florentine-style ai Pazzi Pizza counter.  Pearls’ seafood-centric menu encompasses oysters, crab cakes, a poke bowl, lobster roll, fish & chips, and more. The splurge is the seafood tower, including oysters, lobster, and shrimp cocktail, for $65. Cozy up to this casual and elegant seafood bar and wait for a special feeling to kick in.
